Breakfast Recipe:
Peameal Bacon Breakfast Sandwich

Ingredients:

  • - 6 slices of peameal bacon

    - 4 English muffins or a bread of your choice, split and toasted

    - 4 large eggs

    - 4 slices of cheddar cheese (or your preferred cheese)

    - 1 tablespoon butter

    - 1 tablespoon olive oil

    - 1 ripe avocado, sliced (optional)

    - 4 slices of tomato (optional)

    - Salt and pepper to taste

    - Ketchup, mustard, or hot sauce (optional, for serving)

Preparation:

1. Cook the Peameal Bacon:

   - Heat a skillet over medium heat and add the olive oil.

   - Add the peameal bacon slices to the skillet and cook for about 2-3 minutes per side, or until they are golden brown and cooked through.

   - Once cooked, remove the bacon from the skillet and set aside.

 

2. Cook the Eggs:

   - In the same skillet, add butter and allow it to melt.

   - Crack the eggs into the skillet (you can cook them one at a time or all at once, depending on the size of your skillet).

   - Season with salt and pepper.

   - Cook the eggs to your preferred doneness—sunny-side-up, over-easy, or scrambled.

 

3. Assemble the Sandwiches:

   - Place a slice of cheese on the bottom half of each toasted English muffin.

   - Add the cooked peameal bacon slices on top of the cheese.

   - Place the egg on top of the bacon.

   - Add a slice of avocado and tomato, if using.

   - Top with the other half of the English muffin.
